Kitchen work space basics
The efficient kitchen concept comes from 1940s kitchen, which had large appliances and single cook; however, this old logic has been in use for more than a hundred years.
Modern kitchen's layout determines how easy it will be to cook, eat and socialize in the kitchen. So, the kitchen triangle is still valid – after all we still have a cooking surface, sink and refrigerator but we also have ovens separated from the cooking surface, dishwashers, recycling, more appliances, maybe people cooking together and people keeping us company in the kitchen. The kitchen work triangle connects the three crucial work areas:
Generally, the distance between these areas should be no less than 4 feet (too small space) and no larger than 9 or 20 feet (too large space). A double run galley kitchen needs minimum 42 inches (48 inches is recommended) between the aisles. The second important thing to keep in mind is to make sure that the lines of the triangle aren't blocked by anything. Keeping a certain amount of space between the main working areas makes cooking much easier and helps keep traffic in the workspace to a minimum. Utensils, pots and spices should be near the stove. Positioning the refrigerator at the entrance to the inner work area allows family members to access the fridge without interrupting the cook. Both the fridge and wall oven have a drop-off zone in immediate reach. Depending on the exact distance between the sink and the cooktop, there's a good chance that two people could work in this kitchen at the same time.

- One-wall or Single-line kitchen: It is most satisfactory for small open-plan houses and apartments. The work pattern is difficult and tiring in this type of kitchen. Place the sink in the center with the refrigerator and stove at the opposite ends. there should be min of 1' -2' distance between sink & refrigerator. At least 3m of wall space is needed.
- L-shaped kitchen: It is adaptable to any interior plan and can form an efficient work triangle and diverts traffic to some extent. Only one side can be over 12' or 15', the other side has to be 7' or less than 12'.The sequence of centers should be planned: from storage to clean-up to cooking to service. The open end is used as an eating area. Placing the sink or cook-top in the island so that you're facing out rather than towards the wall, makes it even easier to converse with family and guests while cooking or cleaning up. Great for entertaining and multiple cooks, the L-shape kitchen layout is ideal for socializing while preparing meals.
- Corridor or Galley kitchen: These kitchens were originally designed for ships, they are efficient in terms of space utilization where you can place the maximum counter space in the smallest space. These kitchens are best for long narrow rooms and typical of many apartments. Allow a minimum of 120 cm between facing units for access.
- U-shaped kitchen: It is the best type of Gallery or Corridor Kitchen, as its the most efficient and functional of any kitchens plans. It actually reduces the number of wasted steps but can get congested if its used by more than one person. A larger U-shape kitchen (bigger than 10' spaces diagonally), layout that has room for an centre island or table is great choice for a two chef kitchen. There needs to be a minimum of 3½ feet of clearance between the island and surrounding cabinets and appliances.
- G-shaped kitchen: adds extra counter space and cabinets for kitchens without enough width for an island. It is similar to the U-shape kitchen but, adds a fourth peninsula-style counter typically used as a breakfast bar. This open-end counter maximizes the available space without closing off the kitchen with a full wall of cabinets. Keep at least 4 feet of pass thru area between the end of the peninsula and the first wall so that it's easy to get in and out of the kitchen area.
